You can always celebrate with traditional Irish dishes like corned beef and cabbage – but personally I prefer to celebrate with a sweet treat made from Baileys Irish Cream!
It’s so easy to create a dessert with this sweet Irish liqueur.
Give chocolate cupcakes a Baileys’ twist with a Baileys frosting. Simply substitute Bailey’s for the milk in your favorite homemade frosting recipe.
Baileys also is a delicious addition to a cheesecake batter. Topped with a chocolate ganache, it makes for a decedent treat.
You can also give a store-bought dessert a Baileys’ twist. Top warm store-bought brownies with a scoop of vanilla ice cream and a generous drizzle of Baileys.
A boozy milkshake is also a perfect way to enjoy Baileys for dessert. Just substitute Baileys for some of the milk in your favorite milkshake recipe.
For St. Patrick’s Day tonight, consider making a fun Shamrock green Baileys milkshake.
Combine 1 ¾ oz. Baileys, ½ cup milk and 3 scoops mint chocolate chip ice cream in a blender.
Make it fancy by drizzling chocolate syrup in the glass. Whipped cream, a cherry and shamrock –shaped sprinkles or Lucky Charms cereal can add the finishing St. Paddy’s Day touch.
For the kiddos, just make a Baileys free version.
Not up for baking, just enjoy Baileys the classic way – over ice.
If you’re not a big drinker, you can buy little travel size bottles for these recipes. They’re usually sold at the check-out area of most liquor stores.
But if you love the flavor of Baileys as much as I do, keep a small bottle on hand for whipping up an Irish-themed dessert or cocktail any time of the year.

St. Patrick’s Day Milkshake
- 1 ¾ oz. Baileys Original Irish Cream
- ½ cup Milk
- 3 scoops Mint Chocolate Chip Ice Cream
- Chocolate Syrup
- Whipped Cream
- Garnishes (Chopped Pistachios, Candies, Small Cookies, Clover)
In a blender, combine ½ cup milk, 1¾ oz Baileys Original Irish Cream, and 3 scoops mint chocolate chip ice cream until smooth.
Drizzle inside surfaces of 2 serving glasses with chocolate syrup.
Pour half of the ice cream mixture into each glass.
Top with whipped cream and garnishes of your choice.
Serve 2.
